Melon and mint soup
This first course is excellent. It will surprise you with its soft texture and refreshing but intense taste.
Exquisite and elegant, it can be prepared in a moment.

Serves 4
Ingredients
1 ripe cantaloupe, peeled and cut into pieces, seeds discarded
1/2 lemon, washed, seeded but with the whole zest
12 mint leaves
1 tbsp grated fresh ginger
1 ripe avocado; bone and skin discarded
1/2 glass of spring water
4 medium strawberries (for garnishing)
Preparation method
Combine all ingredients in a blender jar and blend until a cream forms.
You can add a bit more of water if the cream is too soupy.
Serve and garnish with strawberries.
